Yankee Rye Biscuits
Ingredients:
- 1 1/2 cups rye flour
- 1 1/2 cups all-purpose flour
- 4 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon sugar
- 1 teaspoon salt
- 6 tablespoons chilled butter, cut into bits
- 1 1/2 cups whole milk
Instructions:
Preheat the oven to 425º F. Grease a baking sheet. Whisk together all the dry ingredients, then rub in the butter bits until the mix looks like meal. Add the milk and stir until the dough is soft and sticky. You may have to add more flour to make the dough handleable; do this until you can knead it, and then do so 4 or 5 times on a floured surface. Roll it out to 1/2 inch and cut out 3-inch rounds. Bake them on the greased sheet in the center of the oven for about 15 minutes.
Yield: Around a dozen biscuits
