Whoopie Pies
Ingredients:
Cakes:
- 1 stick softened butter
- 1 cup sugar
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 cup cocoa powder
- 1 egg
- 1 cup milk
- 1 teaspoon vanilla extract
Filling:
- 1 stick butter
- 1 cup confectioners' sugar
- 1 cup marshmallow creme (or vegetarian substitute)
- 1 teaspoon vanilla
Instructions:
Preheat oven to 350º F. Cream the butter and sugar, then sift together the flour, baking soda, salt, and cocoa, blend it together, and add it to the creamed mix. Add in the egg, milk, and vanilla, and mix until smooth. Drop rounded teaspoons onto an ungreased cookie sheet and bake for 7-9 minutes. Cool them on wax paper. Beat the filling ingredients together and spread on half the cakes, topping them with the remaining cakes.
Yield: About a dozen big sandwich cookies

NOTE: Since this has marshmallows in it and marshmallows contain gelatin, this isn't technically a vegetarian recipe. If anyone you're serving this to doesn't bend into gray areas, don't use it for vegetarians unless you use a vegetarian-friendly marshmallow substitute.
