White Gingerbread Tea Cake
Ingredients:
- 2 cups all-purpose flour
- 1 cup sugar
- 1 stick sweet butter, room temperature
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon mace
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 egg
- 1/2 cup buttermilk
Instructions:
Preheat the oven to 350º F. Mix together the flour, sugar, and butter. Add 1/2 teaspoon of the cinnamon. Blend together. Set aside 1 cup of that mixture, then add ginger, mace, salt, baking soda, baking powder, and remaining cinnamon to the rest. Mix together, add the egg and the buttermilk, and beat until smooth. Pour into a greased 10-inch tube pan. Sprinkle the reserved mixture evenly over the top. Bake about 40 minutes. Cool and serve.
Yield: 16 to 20 slices
