White Cupcakes
Ingredients:
- 3 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 2/3 cup butter, softened
- 1 3/4 cups sugar
- 2 eggs
- 1 1/4 cups whole milk
- 1 teaspoon vanilla extract
Instructions:
Preheat the oven to 350º F. Sift the dry ingredients together in one bowl. Then cream the butter in a separate (large) bowl and add the sugar. Whip until fluffy. Add eggs to the butter mix, one at a time. Combine the milk and vanilla in a third bowl. Add a fourth of the flour mix to the butter mix and stir in. Then add a fourth of the milk mix to the butter mix and stir in. Keep alternating the two in the same amounts, stirring as you go, until all of the ingredients are mixed together. Bake 15-20 minutes. Cool in the cupcake pan for 10 minutes, then cool on rack.
Yield: 2 dozen or so
