Hot Milk Sponge Cake
Ingredients:
- 2 eggs
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 cup sugar
- 1/2 cup milk
- 2 tablespoons butter
Instructions:
Allow eggs to stand at room temperature for half an hour. Grease a 9x9x2 baking pan. In a bowl, stir together the flour and the baking powder. Beat the eggs in another bowl until thick; about 4 minutes on high if using an electric mixer. Gradually add sugar, beating on medium 4-5 minutes until light and fluffy. Add the flour mixture, beating on low until just combined. In a small saucepan, heat and stir the milk and the butter together. Then add it to the batter until combined. Pour the mix into the prepared pan. Bake at 350º F for 20-25 minutes. Cool in the pan on a wire rack.
Yield: 9 healthy pieces
