Sand Tarts
Ingredients:
- 1 1/2 sticks butter, room temperature
- 1 1/4 cups sugar, sifted
- 1/4 teaspoon salt
- 1 egg
- 1 egg yolk (reserve white for egg wash)
- 1 teaspoon vanilla extract
- 1/2 teaspoon nutmeg
- 3 cups all-purpose flour
- sugar for dusting--I recommend raw, big-crystal sugar
Instructions:
Cream butter until soft. Gradually add sugar and blend until creamy. Mix together salt, egg, egg yolk, vanilla, and nutmeg, and beat that into the butter mix. Sift flour into the butter mix and stir until blended. Chill for several hours. Preheat the oven to 375º F. Roll the dough to 1/4 inch thickness. Cut out into shapes with cookie cutters. Brush the tops with whipped egg white and sprinkle with sugar. Bake on greased cookie sheets for 8 minutes. Serve with dippable icings or pudding.
Yield: 4 dozen
