A Rich Cracker
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 1/4 cup butter, room temperature
- 3/4 cup milk
- 1 egg
- Coarse or kosher salt
Instructions:
Preheat the oven to 400º F. Put together 1 cup of the flour plus all the dry ingredients. Mix until even. Cut in the butter. Stir milk and egg together in another bowl, then dump into the dry mix. Add the rest of the flour, 1/4 cup at a time. Knead for 4 minutes on a floured surface. Divide into two pieces and wrap the second piece in plastic wrap while working with the first; this will help it avoid getting dried out. Roll out thin, prick liberally with a fork, and cut into squares. Sprinkle with salt. Bake on ungreased cookie sheets for 10-20 minutes until richly brown in color. Cool them on a wire rack.
Yield: 50-70 crackers
