Pumpkin Bread
Ingredients:
- 1 3/4 cups all-purpose flour
- 1 1/2 cups sugar
- 3/4 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup canned pumpkin
- 1/3 cup water
- 2 large eggs
- 1 teaspoon vanilla
- 1/2 cup vegetable oil
- 1/2 cup chopped walnuts
- confectioner's sugar for dusting
Instructions:
Combine all the dry ingredients (including spices) in a large bowl and mix them together. Then in another large bowl mix the pumpkin, water, eggs, vanilla, and oil. Add the dry ingredient mix to the wet ingredient mix slowly and beat until smooth. Add the nuts and stir them in. Pour the mixture into a greased loaf pan. Bake at 350º F for 75-80 minutes. Cool for 15 minutes in the pan, then turn out onto a wire rack. Sprinkle with the powdered sugar.
Yield: 1 loaf
