Spiced Pumpkin Biscuits
Ingredients:
- 2 cups all-purpose flour
- 4 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons light brown sugar
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1/4 cup margarine, cut in bits
- 1 cup pumpkin puree
- 1/4 cup plain yogurt (not nonfat or lowfat)
Instructions:
Preheat oven to 425º F. Whisk together the dry ingredients. Rub in the margarine. Mix the pumpkin and yogurt together in another bowl and add it to the dry mix. Stir until sticky--add more yogurt if necessary. Knead about eight times on a work surface. Pat out to 1/2 inch thickness and cut 2-inch biscuits with a cutter. Arrange about 1 inch apart on a cookie sheet and bake in the upper third of the oven for about 12 minutes.
Yield: 16-18 biscuits
