Popovers
Ingredients:
- 4 large eggs, room temperature
- 1 1/4 cups whole milk, room temperature
- 3 tablespoons vegetable oil
- 1 cup all-purpose flour
- 3/4 teaspoons salt
- butter or jam for serving
Instructions:
Preheat the oven to 425º F. Grease 12 muffin cups. Combine eggs, milk, and oil in the blender or with a medium electric mixer for about 10 seconds. Add the flour and salt, and blend for 15 seconds. Fill the muffin cups about 3/4 of an inch full. Bake for about 28 minutes. Tip onto a wire rack to cool. Pierce with a dowel to let out the steam. Serve!
Yield: 12 popovers
