- 2 cups powdered sugar
- half the white of a small egg
- 1/4 tsp peppermint flavoring
- 2 tsp lemon juice
- red and green food coloring
- cookie cutters
Sift sugar through a sieve into bowl. Make hole in center. Mix egg white, peppermint, and lemon juice and pour in. THIS CONFECTION WILL NOT BE COOKED SO FOR SAFETY REASONS IT IS BEST TO USE PASTEURIZED EGG WHITE PRODUCT. (It may make the math a bit tricky on measuring out half of an egg white, but do your best.) Stir the mix, then squeeze it into a lump. Cut it into two halves and dye one half red and the other green with two drops each of the food coloring. Add more sugar if the mixtures are too sticky to roll out. Roll each out as thin as you can and cut out shapes with cookie cutters. It's likely that it will not roll out very thin, so a small shape, such as that you could cut from a bottlecap, is advisable. Leave them to harden overnight, then store in an airtight container.
Yield: Depends on the size candies you make!
