Pancakes
Ingredients:
- 1 cup all-purpose flour
- 1 tablespoon granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 beaten egg
- 1 cup milk
- 2 tablespoons cooking oil
Instructions:
Combine flour, sugar, baking powder, and salt. Make a well in the middle and set aside. Combine egg, milk, and oil. Mix and add to the dry mix. Stir together until just combined; you want it to still be lumpy or you'll get frothy pancakes. Cook on a griddle about 2 minutes on each side--generally you can tell it's ready to be flipped when the bubbles around the outside pop and stay open rather than closing again. If you have a non-stick pan, this will cook well without any butter or oil in the pan! Otherwise, depending on the cooking surface, you may want to use cooking spray of some kind.
Yield: 7 to 10 medium pancakes
