Instructions:
Heat a pan, sprayed with non-stick spray, on about medium. Place five or six slices of banana in the pan, one at a time. By the time the last banana piece is put in the pan, the first will probably need to be flipped. Flip each piece. Then remove in the same order onto a plate. Repeat this process, re-coating the pan each time with non-stick spray, until each slice has been fried--they should be slightly browned.
You will probably have extra egg white. As a last step, spray the pan one last time and pour in the egg white, and as it turns thick and white from the heat, move it around and stir until all the egg white has been cooked into scrambled egg. Eat it with your snack.
NOTE: The easiest way to make this recipe successfully is to use specially-purchased egg white product instead of the actual whites from eggs. If you do use real separated eggs, you can scramble the yolks into the leftover white, cook as described, and eat it with your snack, or just use the yolks for another recipe.
