Muffins
Ingredients:
- 1 3/4 cups all-purpose flour
- 1/3 cup sugar
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 beaten egg
- 3/4 cup milk
- 1/4 cup cooking oil
Instructions:
Grease muffin cups or use paper liners. Combine flour, sugar, baking powder, and salt. Mix. Make a well in the center. Then combine egg, milk, and oil in a separate bowl. Add to dry mix and stir, leaving lumpy. Spoon into muffin cups, about 2/3 full each. Bake at 400ºF for about 20 minutes. Cool on a wire rack for 5 minutes, then serve.
Yield: 10-12 muffins
