All Hallow's Eve Cakes
Ingredients:
- 1/2 cup vegetable oil
- 4 ounces unsweetened baking chocolate, melted
- 2 cups granulated sugar
- 4 large eggs
- 2 cups sifted cake flour
- 2 teaspoons vanilla extract
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup confectioner's sugar
Instructions:
In large bowl, mix oil, chocolate, and sugar. Blend in eggs, one at a time, stirring. Mix in vanilla. In small bowl, mix flour, baking powder, salt. Stir flour mix into oil mix. Chill 4 hours or overnight. Preheat oven to 350º F. Spoon 1 tablespoon dough into a ball. Coat balls in confectioner's sugar. Place on baking sheet 2 inches apart. Bake 10-12 minutes. Cool on the sheet for about three minutes before transfering to wire rack to cool. These spread like the dickens so make sure you leave them plenty of room to bake. If they come out of the oven and won't come off the sheet even after they're cool, bake them for another 7 minutes or so and let them cool again. it works!
