Crescent Cakes
Ingredients:
- 1 cup finely ground almonds
- 1 1/4 cups flour
- 1/2 cup confectioner's sugar
- 2 drops almond extract
- 1/2 cup softened butter
- 1 egg yolk
Instructions:
Combine almonds, flour, sugar, and extract until thoroughly mixed. With hands, work in butter and egg yolk until well-blended. Chill dough. Preheat oven to 325º F. Take pieces of dough (about walnut-size) and shape them into crescents. Place on a greased sheet (they don't spread out when they cook so you can put them close together if you want). Bake for about 20 minutes.
Yield: 15 or 20, depending on how small or large you pinch the pieces.
