Chocolate Cupcakes
Ingredients:
- 3 ounces unsweetened chocolate
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 cups sugar
- 1/3 cup butter, softened
- 1 cup sour cream
- 2 eggs
- 1 teaspoon vanilla extract
- 1/4 cup hot water
Instructions:
Preheat the oven to 350º F. Melt the chocolate in a saucepan. Sift the dry ingredients together in one bowl. Add the butter and sour cream to the dry ingredients and beat. Stir in the chocolate. Add eggs to the mix, one at a time. Add the vanilla and the water and beat until smooth. Pour into tins. Bake 15-20 minutes. Cool in the cupcake pan for 10 minutes, then cool on rack.
Yield: 2 dozen or so
