Chocolate Coffee Cake
Ingredients:
For streusel (the topping):
- 2/3 cup flour
- 1/2 cup light brown sugar
- 1/2 teaspoon cinnamon
- 6 tablespoons cold butter
- 3/4 cup chocolate chips
For cake:
- 1 1/2 cups flour
- 1/2 cup cake flour
- 2/3 cup cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup butter
- 1 cup sugar
- 3 eggs
- 1 1/4 cups sour cream
- 1 1/2 teaspoons vanilla
Instructions:
Preheat the oven to 350º F. Grease and flour a 9 x 13 baking pan. Make the streusel: Stir the dry ingredients together and rub in butter, then stir in chips. Make the cake: In a bowl, stir together the flours, cocoa, baking soda and baking powder, and salt. In a separate bowl, use a beater on medium to cream the butter and sugar. Add in eggs one at a time and beat. Now add half of your dry batter to that and beat, then add the sour cream, and finally add the other half of the dry mix. After adding in the vanilla to the whole mix, beat it on low for 2 minutes. Spoon the batter into the pan and spread it out evenly. Sprinkle with the streusel. Bake for 40-45 minutes. Cool in the pan on a rack. Cut into squares and serve with coffee!
Yield: 1 9 x 13 cake
