Filling
Instructions:
Heat oven to 350º F. Shape dough into 1-inch balls, roll in sugar. Place 2 inches apart on ungreased cookie sheets. Flatten cookie balls to 1 1/2-inch rounds with the bottom of a fancy-printed wine or drinking glass to make an aesthetically pleasing design. (Coat bottom of glass in sugar also before each press.)
Bake for 6-10 minutes. Remove from sheets immediately and cool.
Melt butter in a saucepan over medium heat and cook until light golden brown. Remove from heat. Stir in remaining filling ingredients, adding enough milk for desired spreading consistency. Spread about 1 teaspoon of filling for each sandwich cookie.
Note: You can even dye the icing with food coloring and maybe try different flavors to make interesting variations. To make a different flavored icing, use half the recommended amount of vanilla (1/4 instead of 1/2) and then the other 1/4 teaspoon use another extract, such as almond, mint, cherry, or rum.
