Caramel-Buttermilk Icing
Ingredients:
- 1/4 pound butter or margarine
- 2 cups sugar
- 1/2 cup buttermilk
- 1/2 teaspoon baking soda
- 1 tablespoon light corn syrup
- Pinch of salt
Instructions:
Combine all ingredients in a saucepan. Cook the mixture over low heat and continue stirring until thickened. THIS WILL TAKE A LONG TIME, be patient. If you cook it long enough and continue to beat it, it will thicken, and the mixture will thicken more the more you beat it regardless of heat. (It is almost entirely liquid when you start, so don't balk when you see that's the case.) If you need a little extra help to get it to be thick enough to spread, simply refrigerate it and then beat it again.
Yield: Enough for 2 layers, plus probably a little extra
