Caramel Refrigerator Cookies
Ingredients:
- 1/2 cup butter
- 1 cup brown sugar
- 1 egg
- 1/2 teaspoon vanilla
- 1 3/4 cups flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions:
Mix together butter, sugar, egg, and vanilla. Sift together the dry ingredients in a separate bowl: Flour, baking soda, and salt. Stir it up evenly and then mix it into the creamed mix. Form the dough into a roll 2 1/2 inches across. Wrap it in wax paper and chill for a couple hours. Preheat the oven to 400º F. Cut the roll in 1/8" slices. Place them a little apart on an ungreased cookie sheet. A good tip is to roll the log slightly as you cut so that the last cookies aren't more squished-looking; if you keep rotating the log, the pressure will not warp the shape. Bake the cookies for 8-10 minutes.
Yield: About 5 dozen
