- 1 large ripe cantaloupe (about 3 pounds)
- 3 1/2 cups unsweetened orange juice
- 3 tablespoons lemon juice
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground allspice
Cut cantaloupe in half. Remove the seeds and pulp in the middle and cut out the flesh, cutting into 1-inch cubes. Place the cubes, 1 1/2 cups of the orange juice, and the spices into the blender. Cover and process until smooth. Pour the mixture into a bowl, stir in the last 2 cups of orange juice, and cover and chill. To serve, ladle into bowls and garnish however you desire (maybe with some dusted allspice on top).
Yield: 6 1-cup servings
NOTE: A standard-size blender is not usually big enough to hold everything at once. You might try processing half of the cantaloupe at a time, adding in 3/4 cup of orange juice and 1/8 teaspoon of each spice at a time.
If you want to be fancy in serving this for two, be careful about scraping the inside of the cantaloupe shell and then place the shell in a bowl to hold it steady, then pour your serving into the cantaloupe shell itself. It looks really cute.
