Butter-Yogurt Biscuits
Ingredients:
- 2 cups cake flour
- 3 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 5 tablespoons chilled butter, in bits
- 1 cup plain yogurt (don't use lowfat or nonfat)
Instructions:
Preheat the oven to 475º F. Grease a baking sheet. Whisk together the dry ingredients, then rub in the butter. Add yogurt and stir until a soft ball forms. Transfer to a floured board and knead about 8 times. Pat to 3/4-inch and cut out 2-inch rounds. Arrange on the sheet about 1/2 inch apart. Bake in upper third of the oven, about 10-12 minutes.
Yield: 1 dozen
