Quick Buttermilk Cake
Ingredients:
- 1/2 cup butter
- 1 cup sugar
- 3 large eggs
- 1 1/2 cups cake flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- pinch of salt
- 3/4 cup buttermilk
- 2 teaspoons minced fresh orange zest
Instructions:
Preheat oven to 350º F. Butter and flour a 10-cup bundt pan. Cream butter for one minute, then add sugar, beating constantly for two minutes. Beat in eggs. Stop beating and add flour, soda, powder, salt, buttermilk, and zest. Beat for two more minutes (on medium if using electric mixer). Pour batter into pan and bake for 40 minutes. Remove pan from oven and put on cake rack; let rest for 10 minutes. Invert cake on rack and let cool.
Yield: 10-12 servings
