Giant Chocolate Chip Cookie
Ingredients:
- 6 tablespoons butter, softened
- 1/2 cup sugar
- 1/4 cup packed light brown sugar
- 1/2 teaspoon vanilla
- 1 egg
- 1 cup flour
- 1/2 teaspoon baking soda
- Chocolate chips to taste (recipe recommends 2 cups; I recommend 3/4 cup to 1 cup)
- Optional frosting and ice cream to eat with it
Instructions:
Preheat the oven to 350º F. Line EITHER a pizza-sized pan OR two 9-inch cake pans with foil. Beat together the butter, sugars, and vanilla. Add the egg in and beat again until blended. Stir together the baking soda and the flour, then add that to the butter mixture gradually, mixing after each addition. Stir in the chips. Spread into the pan or pans, leaving a space of about 1 inch around all sides because the cookie(s) will spread. Bake 18 to 22 minutes. Cool, then lift out. Cut into servable pieces or frost with icing for a festive different sort of birthday cake. (Recommended: Large checkerboard squares if using one giant cookie, but pizza-like wedges if using two nine-inch pan cookies!)
Yield: 1 giant cookie or 2 semi-giant cookies
