Cape Breton Bannocks
Ingredients:
- 1 cup whole wheat flour
- 1/2 cup flour
- 1/2 cup rolled oats
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon sea salt
- 3 tablespoons melted butter
- 1/3 cup raisins
- 1 cup buttermilk
Instructions:
Preheat oven to 375º F. Combine all the dry ingredients in a bowl: Flours, oats, sugar, baking powder, and salt. Mix well. Add in the butter, raisins, and milk and stir until it becomes sticky. Add water if the dough is too thick; add a little flour if too sloppy. Butter a nine-inch pie pan and pat the dough into the pan with floured hands. Mark into 8 wedges. Bake 25 minutes. Serve warm.
Yield: 8 wedges
