Roasted Apples with Ice Cream

• 4 tablespoons butter or margarine
• 3/4 cup packed light brown sugar
• 1/3 cup golden raisins
• 2 tablespoons fresh lemon juice
• 2 tablespoons Calvados (apple brandy), apple juice, OR water
• 6 small Granny Smith apples, cut in half and cored
• 1 1/2 pints vanilla ice cream

Instructions:

Preheat oven to 425ºF. In 2-quart saucepan, melt butter over medium heat. Add other ingredients (except apples and ice cream) and cook, stirring constantly, until the sugar melts. Pour the mixture into the bottom of a 15 1/2 x 10 1/2 inch pan. Add the apples, with the cut sides down. Roast for 20 minutes without turning. Then serve apples (and their syrup!) with ice cream.

NOTE: Try drizzling the apple syrup onto the ice cream.
