Apple Loaf
Ingredients:
- 1 egg
- 8 fl oz bottled or homemade applesauce
- 1/4 cup butter or margarine, melted
- 1/2 cup dark brown sugar
- 1/4 cup granulated sugar
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon grated nutmeg
- 2 1/2 oz currants or raisins
- 2 oz or 1/4 cup pecans or walnuts, chopped
Instructions:
Preheat oven to 350º F. Grease a 9 x 5 inch loaf tin. Break the egg into a bowl and lightly beat. Stir in applesauce, butter, and both sugars. Set bowl aside. In another bowl, sift together the dry ingredients (but not the raisins or nuts yet). Once combined, fold the dry ingredients into the applesauce mix in three helpings. Finally, stir in the currants/raisins and nuts. Pour into prepared tin and bake about 1 hour. Let stand for 10 minutes and then turn out onto a rack to cool.
Yield: 1 loaf
