Spiced Apricot Bars
Ingredients:
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon ground cardamom OR 1/8 teaspoon nutmeg
- 1 slightly beaten egg
- 1/2 cup packed brown sugar
- 1/2 cup apricot nectar or orange juice
- 1/4 cup unsweetened applesauce
- 2 tablespoons cooking oil
- 1/2 cup finely snipped dried apricots
For icing:
- 1/2 cup sifted powdered sugar
- 2-3 teaspoons apricot nectar
Instructions:
Stir together flour, baking powder, baking soda, and cardamom; set aside. Seperately, mix egg, brown sugar, apricot nectar, applesauce, and oil. Add egg mix to flour mix, stirring until just combined. Stir in apricots. Spread batter in ungreased pan. Bake in 350º F oven for 20-25 minutes. Cool for 2 hours. Drizzle with apricot frosting and cut.
Yield: 24 bars
